Badass Pancakes

Ingredients

  • 1⅓ cups flour
  • 3 Tbsp sugar or stevia (original wording; use a product-appropriate stevia equivalent rather than equal volume unless specified)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 2 eggs
  • 1¼ cups buttermilk
  • 2 Tbsp melted butter

Directions

  1. Reconstructed directions: Preheat a lightly greased griddle or skillet over medium heat.
  2. Whisk together the flour, sweetener, baking powder, baking soda and salt.
  3. In another bowl, whisk the eggs, buttermilk and melted butter.
  4. Stir wet ingredients into dry just until combined; a few lumps are fine.
  5. Pour portions onto the hot griddle. Cook until bubbles form and the edges begin to set, then flip and cook until golden and cooked through.

Original handwritten card

The handwritten card abbreviates the title to “BA Pancakes.” The family confirms Angel called these “Badass Pancakes” and regularly told people that name. Only ingredients are recorded, so the cooking directions above are reconstructed.

Ingredient notes

The written salt amount is 1 teaspoon, which may be more than some people prefer. Stevia potency varies widely by product; 3 tablespoons stevia may be excessive unless it is a specifically formulated cup-for-cup sugar substitute. Preserve the original recipe when testing variations.
