BSM Chicken (Brown Sugar Mustard Chicken)

Ingredients

  • ½ cup Dijon mustard
  • ⅓ cup brown sugar
  • ½ tsp allspice
  • 8 chicken thighs

Directions

  1. Suggested method, not written on the note: Preheat the oven to 400°F.
  2. Mix the Dijon mustard, brown sugar and allspice into a glaze.
  3. Place chicken thighs in a baking dish and coat evenly with the glaze.
  4. Roast until a thermometer inserted into the thickest part reads at least 165°F, avoiding the bone; bone-in thighs may take approximately 35–45 minutes, depending on size. For tender dark meat, 175–185°F may be preferred.
  5. Let rest briefly before serving.

Original recipe note

The handwritten note is titled “BSM Chicken” and contains only four ingredients: ½ cup Dijon, ⅓ cup brown sugar, ½ tsp allspice, and eight thighs. “Brown Sugar Mustard” is a likely expansion of BSM, but the abbreviation is not defined on the note. The oven directions above are editorial reconstruction, not an original instruction.

Cooking note

Chicken must reach at least 165°F internally. Sweet glaze may brown before chicken is fully cooked, so cover loosely with foil if needed and check with a thermometer.
