Version 1.1 · Salt-Aware, Nose-to-Tail

Canary Donuts

Ingredients

  • 1 lb ground beef (80/20 preferred)
  • 2 egg whites (for structure)
  • 2 egg yolks (for salted centers)
  • 2 oz cream cheese, softened
  • Salt, divided use, to taste

Directions

  1. Beef base: Gently mix ground beef, softened cream cheese, and egg whites. Do not add salt yet.
  2. Form donuts: Divide into four equal patties. Use a clean shot glass or round cutter to remove the center of each patty, making four rings. Save the center plugs.
  3. Cook: For baking, preheat the oven to 375°F (190°C), place the rings and center plugs on a parchment-lined baking sheet, and bake approximately 12–15 minutes, checking for doneness. Alternatively, pan-cook over medium heat approximately 3–4 minutes per side, adjusting as needed. Ground beef and egg-white mixtures should reach 160°F (71°C) throughout.
  4. Taste: Taste a fully cooked center plug. Add a light sprinkling of salt to the beef rings only if needed.
  5. Salted yolk centers: Lightly salt the egg yolks. Spoon or divide them into the cooked ring centers. Return to the oven or covered skillet briefly, cooking until the yolk centers reach 160°F (71°C). Residual heat alone does not reliably cook raw yolks to a safe temperature.
  6. Rest: Allow 3–5 minutes of resting before serving.

Yield

4 medium Canary Donuts, or approximately 8–16 mini bites if formed smaller.

Salt note

The yolks provide the primary seasoning. The beef mixture is intentionally unsalted by default; adjust salt only after tasting a fully cooked center plug.

Version note

Canary Donuts v1.1 (Salt-Aware, Nose-to-Tail). The original sheet calls for setting the salted yolks using residual heat. For a fully cooked version suitable for general publication, heat the yolks to 160°F (71°C); residual heat alone is not a dependable substitute. Baking and skillet times are guides, not guarantees. This recipe contains egg whites and dairy.
