Cheese Stuffed Fish

  • 3 ounces mozzarella cheese
  • 6 (3-ounce) fish fillets
  • ½ cup chopped fresh mushrooms
  • 1 tablespoon minced onion
  • 2 tablespoons light mayonnaise
  • 2 slices bread, crumbled
  • Paprika, for sprinkling

Prepare

Directions

  1. Preheat oven to 425°F.
  2. Place approximately ½ ounce sliced mozzarella on each fish fillet.
  3. Combine mushrooms, onion, and 1 teaspoon of the mayonnaise and spread over fish.
  4. Roll fillets pinwheel-style.
  5. Spread remaining mayonnaise over the outsides and roll in bread crumbs.
  6. Arrange seam-side down in a baking dish coated with nonstick cooking spray; sprinkle with paprika.
  7. Bake about 20 minutes, until fish is cooked through.

Kitchen Notes

The original method specifies a small amount of mayonnaise in the stuffing and the remainder on the outside.
