Chinese Slaw with Ramen

A crunchy slaw created by the Hungry Canary cook as a different way to enjoy the ramen noodles she once loved.

Ingredients

  • 16 ounces prepared coleslaw mix
  • 1 packet ramen noodles, uncooked and crumbled
  • 3 tablespoons sesame seeds
  • ½ cup slivered almonds
  • ½ cup canola or olive oil
  • 1 tablespoon soy sauce
  • 4 tablespoons rice vinegar
  • ¼ cup sugar
  • 1 chicken-flavored seasoning packet from the ramen package

Directions

  1. Toast sesame seeds at 350°F for approximately 10 minutes, monitoring closely to prevent burning.
  2. Combine coleslaw mix, uncooked crumbled ramen and slivered almonds in a large bowl.
  3. Whisk or shake the oil, soy sauce, rice vinegar, sugar and chicken seasoning until the dressing is blended.
  4. Pour the dressing over the slaw mixture just before serving and toss well. Add the toasted sesame seeds; the original notes toast them separately but do not specify their addition point.

From the Creator's Kitchen

Original and made: This is the creator's own slaw recipe, developed because she loved ramen noodles and wanted to do something different with them. The original recipe predates some of her current dietary restrictions and is preserved as written.

Notebook clarification: The sesame seeds are toasted separately in the written directions. Adding them to the finished salad is a practical interpretation; the exact mixing point may be confirmed later. The creator confirms that the ramen noodles are added uncooked and that the dressing uses the chicken-flavored seasoning packet included with the ramen.
