Ingredients

  • 4 pieces soft, rollable flatbread (replaces lavash)
  • 1 large English cucumber, or enough for a thin layer of slices
  • 1 (8-ounce) block cream cheese, softened

Directions

  1. Thinly slice the English cucumber. Peel if preferred.
  2. Spread softened cream cheese evenly over one piece of flatbread, leaving a small border at one short end.
  3. Arrange cucumber slices in a thin layer across the cream cheese.
  4. Starting at the short end opposite the border, roll tightly into a log.
  5. With a sharp serrated knife, cut into four even sections. Repeat with the remaining flatbreads.
  6. Serve promptly, or cover and refrigerate briefly until serving so the bread does not become soggy.

From The Hungry Canary Kitchen

Made often: The creator regularly prepared this as a meal for herself, substituting English cucumber and ordinary flatbread for the original lavash-and-cucumber combination. The source's original quantity of one large English cucumber has been retained as a practical guide; the precise amount used in her batches was not recorded.

What is lavash? Lavash is a thin, flexible flatbread, widely used in West Asian cuisines. Ordinary soft flatbread can work for pinwheels too, provided it is pliable enough to roll without splitting.

Original Source

Adapted from Cucumber and Cream Cheese Sandwich Rolls (with Lavash Bread) by Christina Conte. The original calls for 4 lavash pieces, Persian or English cucumber, and 8 ounces cream cheese. The directions here are independently rewritten and document the creator's actual ingredient changes.

The printed original lists about 450 calories per 4-piece serving. Nutrition for this flatbread variation depends on the flatbread used and has not been recalculated.
