Falafel with Herbed Cucumber Yogurt
A four-serving chickpea patty recipe with a cool yogurt accompaniment, preserved from a printed recipe in the kitchen collection.
Falafel ingredients
- 4 scallions, cut into 1-inch lengths
- 2 garlic cloves, halved
- ½ cup chopped fresh cilantro
- ¼ cup chopped fresh mint
- 1 (15-ounce) can chickpeas, rinsed and drained
- ½ cup plain dry breadcrumbs
- 1 teaspoon ground cumin
- 1 teaspoon baking powder
- ½ teaspoon sea salt
- 1 teaspoon Tabasco sauce
- Vegetable oil cooking spray
- 2 tablespoons olive oil
- 4 warmed pita pockets
- Shredded lettuce, chopped tomato and sliced onion, to serve
Herbed cucumber yogurt
- 1 cup plain low-fat yogurt
- 1 garlic clove, minced
- 2 tablespoons fresh lemon juice
- 1 Kirby cucumber, seeded and chopped
- Sea salt and pepper, to taste
Preparation
- Stir together the yogurt, minced garlic, lemon juice and diced cucumber. Season with salt and pepper, cover and chill while preparing the patties.
- Process the scallions, remaining garlic, cilantro and mint until finely minced.
- Add the drained chickpeas, breadcrumbs, cumin, baking powder, salt and Tabasco. Pulse to form a rough, cohesive mixture, approximately the texture of thick cooked oats.
- With lightly oiled hands, shape the mixture into four broad patties and mist lightly with cooking spray.
- Warm the olive oil in a large skillet on medium heat. Cook the patties about four minutes per side, until browned and crisp; drain briefly on paper towels.
- Serve in warmed pita pockets with lettuce, tomato, onion and the chilled cucumber-yogurt sauce.
