How Dad Reduced the “Game” Taste

A traditional kitchen note shared by the creator's father, who hunted venison, rabbit, and pheasant.

His recorded method

  1. Soak the game meat overnight in water and baking soda, keeping it in the refrigerator.
  2. Rinse the meat well.
  3. Cook using the intended recipe.

What the notebook does not specify

The note contains no amount of baking soda, ratio of water to meat, or exact number of hours. Those quantities have not been invented.

Family history

The creator learned this practice from her father. He did a great deal of hunting, particularly venison, rabbit, and pheasant, and shared this method as a way to lessen the strong flavor some people describe as “gamey.” This is his remembered kitchen advice, not a separate sauce recipe.

Handling note

This is an archived traditional preparation technique, not a food-safety treatment. Keep raw meat refrigerated during soaking; discard the used liquid and prevent splashing or cross-contamination while handling and rinsing it. The soak does not replace safe cooking, nor can it make spoiled or improperly handled game safe to eat.
