Family history
The creator remembers this as a dish her father made for himself. He was an old country boy and learned the preparation from his own mother. At that time, the creator disliked pork and would not eat salt pork; her mother did not force her to eat it. This recipe is preserved as a family tradition from her father and grandmother, not as a dish the creator grew up eating or invented herself.
Salt pork supplies considerable salt; the handwritten recipe calls for black pepper but no additional salt. The original notebook specifies neither the peas' bag weight nor a serving yield.
