Wild Turkey

Ingredients

  • 1 turkey
  • 2 tablespoons pepper
  • 2 tablespoons salt
  • 3 stalks celery
  • 1 onion
  • 1 teaspoon vinegar
  • ½ teaspoon sweet pepper
  • 1 stick margarine, melted
  • ½ cup flour
  • 2 quarts water
  • 1 potato, sliced (as written)

Notebook directions

  1. Mix salt, pepper and vinegar, then brush skin and inside.
  2. Combine celery, onion, potato and pepper, then stuff the bird.
  3. Mix butter and flour, then brush onto bird (the ingredients list says margarine).
  4. Place on roaster and add water.
  5. Bake at 350°F for 4–6 hours, basting.

Family and notebook notes

The notebook has an apparent discrepancy between the word 'butter' in the directions and 'margarine' in the ingredients. Cooking duration is historical and not a substitute for checking safe poultry doneness.

This is an archival transcription of historical cooking rather than a validated contemporary preparation, processing, food-safety or storage guide.
