Ingredients: Planned Version

  • 4 large flour tortillas
  • 1 cup hummus
  • ½ large cucumber, sliced
  • 2 small San Marzano tomatoes, sliced (in place of Roma tomatoes)
  • 1 avocado, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small carrot, julienned
  • 1 cup mixed salad greens

Omitted: The source recipe suggests 4 teaspoons hot sauce or sriracha, optional. This planned version uses none.

Directions

  1. Gently warm each tortilla for approximately 8–10 seconds in a microwave so it folds more easily.
  2. Spread roughly ¼ cup of hummus across each tortilla.
  3. Divide the cucumber, sliced San Marzano tomatoes, avocado, bell pepper and carrot between the tortillas.
  4. Add a layer of mixed salad greens.
  5. Fold in the sides and roll each tortilla into a tight wrap. Slice in half and serve.

Kitchen Notes

Work in progress: The Hungry Canary cook collected this recipe to try but has not yet made it. She plans to replace the original Roma tomatoes with San Marzano tomatoes, which are the tomatoes she enjoys, and to omit the optional hot sauce entirely. All other ingredients remain as printed pending testing or later changes.

For make-ahead wraps, moisture from tomatoes and cucumber may soften the tortillas. Keep refrigerated and pack chilled for transport.
