Gather

Ingredients

  • 1 (7¼-ounce) can salmon, drained and flaked
  • 1 (8-ounce) package cream cheese
  • 1 (10½-ounce) can cream of mushroom soup
  • 2 envelopes unflavored gelatin
  • ¼ cup water
  • ½ cup finely chopped celery
  • ½ cup finely chopped green onion
  • 1 cup mayonnaise
  • ½ teaspoon curry powder

To serve

Crackers, if desired.

Prepare

Directions

  1. Warm the creamy base. Combine the cream cheese and cream of mushroom soup in a double boiler. Heat gently, stirring until smooth.
  2. Add the gelatin. Following the original recipe, dissolve the unflavored gelatin in the ¼ cup water, then stir it into the warm soup mixture. Practical clarification: Let the gelatin hydrate in the cool water first, then stir until fully dissolved in the warm mixture.
  3. Combine. Fold in the drained salmon, celery, green onion, mayonnaise, and curry powder. Mix thoroughly.
  4. Mold and chill. Pour into a 5-cup mold and refrigerate until firm.
  5. Serve. Unmold and serve chilled with crackers.

This transcription retains the original ingredient amounts and preparation. The gelatin hydration clarification is editorial; the original recipe simply says to dissolve the gelatin in water.

Kitchen Notes

Keep the molded appetizer refrigerated until serving. The original recipe does not specify chilling time or number of servings, so neither has been invented. This archived recipe has not been reported as kitchen-tested for The Hungry Canary.

People adapting the recipe can change the vegetables, seasonings, or serving accompaniment to suit their household, noting that substitutions may change how the molded mixture sets.
