The story behind this recipe
This recipe was shared by Michti Hoatland (first-name spelling uncertain), a friend of the author's mother who came from Okinawa. She was very fond of the author, made these doughnuts often, and taught her their original name. Her surname is not currently recalled. Her husband affectionately called her “the General.” According to family recollection, they met during World War II while he was serving overseas; he stayed in Japan with her before they moved to the United States. They had a son, and she lived in North Carolina for many years. She also tried to teach the author an Okinawan home-style sushi, remembered as an unusually large nori-wrapped roll with rice, a thick strip of cooked egg, a little avocado, pickled ginger, and another ingredient not yet identified, without fish or meat. She sourced ingredients from Japanese stores or her garden; the author remembers struggling to roll it. Its exact name and preparation have not been established.
The measurements and directions are preserved as recorded, including 3½ tablespoons of baking powder.
