Why this fudge became a family tradition
The author's mother loved fudge but had never been able to make it successfully, even with recipes advertised as no-fail. She asked her daughter to try, and the first batch came out perfectly. Her daughter then made several varieties for her mother to taste, and this old-fashioned chocolate fudge was the one she liked best.
It became the fudge the author made especially for her mother, including at Christmas. When living apart, the author prepared and mailed it to her mother in North Carolina from New York, Ohio and Montana; she also made it during visits to North Carolina. It was a continuing act of care and a much-loved treat.
The notebook specifically gives the temperature as 238°F and instructs the cook not to stir after reducing the heat.
