Failure Box

The experiments. The mishaps. The things worth trying again.

A running kitchen log of what was tried, what happened, and what might work next time. Some recipes need another go. Some just need a place in the failure box.

Zucchini Bread (chia/psyllium), Attempt #1

Failure: Mushy center, too salty, lousy texture

Cause: Removed after 25 minutes because the knife came out clean.

Lesson: The knife is a liar.

Zucchini Bread — Test Loaf #1

Ingredients
  • 1 packed cup finely shredded zucchini
  • 1/4 cup ground chia seeds
  • 2 Tbsp psyllium husk powder
  • 1 Tbsp olive oil or melted butter
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 Tbsp apple cider vinegar
  • 1/4 tsp vanilla paste**
  • 6 drops monk fruit sweetener**
  • 1–3 Tbsp water, only if needed
Directions
  1. Finely shred the zucchini. Do not wring it dry. If it is actually dripping wet, give it only a very gentle squeeze.
  2. Combine the zucchini, ground chia seeds, psyllium husk powder, oil or melted butter, salt, baking soda, vanilla paste, and monk fruit drops.
  3. Add the apple cider vinegar and mix thoroughly.
  4. Let the mixture rest for 15 minutes so the chia and psyllium can absorb the zucchini's moisture.
  5. After resting, check the consistency. It should be thick and scoopable, not runny and not crumbly.
  6. If the mixture is too dry, add water 1 Tbsp at a time, mixing after each addition. Use no more than needed.
  7. Press the mixture firmly and evenly into a greased or parchment-lined small loaf pan.

Expectation: developed a beautiful original recipe on paper.

Reality: stare suspiciously at a zucchini loaf and mutter, “You technically work, but I don't like you yet.”

  • What Happened: looked done. Smelled wonderful. Bounced when pressed. Knife came out clean.
  • What actually happened: The center was baked zucchini pudding.
  • Action: test the taste *wrinkles nose then sucker roommate into trying it, diagnose the evidence, put the evidence back in the oven, and immediately begin plotting what to do to its sibling. 😂
  • What we learned: Flourless chia-and-psyllium bread does not care about your traditional knife test.
    Official ruling: The knife lied.
