Cookbook source

“Rosy Applesauce Relish,” contributed by Mrs. Don L. Jacobs to the Ideals Family Cookbook. Her original ingredients are one No. 2 can applesauce, half a cup diced celery, half a cup or fewer raisins, half a cup red-hot cinnamon candies, and two teaspoons prepared horseradish or to taste. Combine, chill overnight, and stir before serving. The contributor notes that it keeps well. Yield: approximately four cups.

Modern measurement

No. 2 can: A historic can-size designation commonly holding about 20 fluid ounces (2½ cups). For modern preparation, measure about 2½ cups applesauce from a jar or other container. Actual can fill weights varied by product.

Ingredient and storage notes

Red-hot cinnamon candies supply both cinnamon flavor and the rosy color; some brands contain dyes and other additives. This is a refrigerator relish, not a shelf-stable canning recipe. Refrigerate promptly and use within a few days rather than relying on the historic “keeps well” statement without a specified duration.
