Snickerdoodle Apple Pie Cookie Cups

An experimental grain-free, lower-sugar adaptation of a printed recipe credited to Jessica & Nellie. This draft has not been baked or validated. Ingredients, structure, yield and timing may change.

Proposed cookie cup ingredients

  • ½ cup softened butter or suitable substitute (selection pending)
  • ½ cup granulated allulose or another tolerated sweetener (selection pending)
  • 2 eggs (egg-white-free binder alternative still needs development)
  • 2 teaspoons vanilla
  • 1½ cups finely ground sunflower seed flour
  • ¼ cup coconut flour
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • 2 teaspoons cinnamon (spice choice pending)
  • ¼ teaspoon salt

Proposed coating

  • 2 tablespoons suitable granulated sweetener
  • 1 teaspoon cinnamon, optional pending preference

Proposed apple filling

  • 2 medium apples, peeled and diced
  • 1 tablespoon butter or suitable alternative
  • 1 tablespoon lemon juice
  • 1–2 tablespoons suitable sweetener, to taste
  • 1 teaspoon cinnamon, optional pending preference
  • Pinch of salt

Experimental method (not tested)

  1. Preheat oven to 350°F. Prepare a mini muffin tin.
  2. Blend the proposed coating ingredients in a shallow bowl.
  3. Cream fat with sweetener; mix in the proposed binder and vanilla.
  4. Mix dry cookie ingredients separately, then combine with wet ingredients to make a workable dough. Texture and proportions have not been verified.
  5. Form tablespoon-size balls, coat, and place in the muffin cups.
  6. Trial-bake about 10–12 minutes, watching for setting and browning. While warm, press a hollow into each and let cool before removing.
  7. For the filling, cook finely diced apples with the remaining proposed ingredients until tender and the juices reduce, approximately 8–12 minutes; cool slightly.
  8. Fill cooled cookie cups with the apples. Record structural performance, flavor and bake time before treating this as a finished recipe.

Important development notes

Not ready to publish as a tested recipe. The alternative flour combination, egg/binder option and sweetener remain experimental. A prior draft proposed whole eggs, but a suitable egg-white-free binder has not been worked out. Other ingredients also need review for individual dietary tolerance. The estimated 24–30 cup yield and baking times are provisional. No nutrition values are claimed for this conversion.
