Cookbook source

“Spice Sauce for Ham,” contributed by Mrs. W. S. McFarlane to the Ideals Family Cookbook. Her five-ingredient sauce calls for two tablespoons red wine garlic vinegar, two tablespoons prepared mustard, half a teaspoon each ground cloves and cinnamon, and a cup of apple jelly. The jelly is melted gently with the seasonings; the sauce firms when cooled and is reheated to serve over ham.

Modern ingredient note

Red wine garlic vinegar: This is most naturally understood as garlic-infused red wine vinegar. If unavailable, use two tablespoons red wine vinegar lightly flavored with garlic, or use plain red wine vinegar for a milder variation. The original specifically calls for prepared mustard rather than dry mustard powder.

Storage note

Refrigerate leftovers in a covered container and reheat gently as needed. No pantry-stable storage or canning directions were supplied in the original.
