Tempura Batter

A simple tempura-style batter the creator used extensively for coating vegetables.

Ingredients

  • ¾ cup cornstarch
  • ¼ cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup water
  • 1 egg

Yield: The original notebook estimates enough for 4 cups vegetables or 1 pound meat, but the creator confirms she used it only for vegetables.

Directions

  1. Combine the dry ingredients in a mixing bowl.
  2. Add water and egg, then stir until smooth.

Use: Coat the prepared vegetables in the batter and fry using an appropriate oil and temperature for the vegetables. The original notebook records only the batter-mixing steps, not specific frying times or temperature.

From the Creator's Kitchen

The creator confirms she made and used this batter very frequently, always for vegetables rather than meat. Tom preferred meat without coatings or batter, seasoned only with salt, pepper and garlic. This is preserved as her tried notebook recipe rather than converted for her current dietary restrictions. The adjacent lemon-tart recipe is separate and not part of the tempura batter.
