Three-Ingredient Lemon Tarts

A simple lemon-and-condensed-milk tart filling, assembled in the creator's homemade puff pastry shells rather than store-bought tart shells.

Ingredients as recorded

  • 1 (14-ounce) can Eagle Brand sweetened condensed milk
  • Juice of 2 lemons
  • Lemon zest, amount not recorded
  • 8 prepared tart shells, according to the handwritten page

Kitchen variation: The creator used homemade puff pastry shells instead of purchased tart shells.

Directions

  1. Put sweetened condensed milk and lemon juice into a bowl.
  2. Mix until thick, approximately 3 minutes.
  3. Spoon the mixture into eight prepared tart shells.
  4. Sprinkle lemon zest on top.
  5. Refrigerate for a couple of hours before serving.

The photographed page doesn't document baking the pastry shells. They must be fully baked and cooled before adding the no-bake filling; the exact pastry bake time and temperature are not recorded.

From the Creator's Kitchen

The collected tart recipe was originally intended for store-bought tart shells. The creator instead made her own puff pastry, repeatedly folding and rolling dough containing 10 tablespoons of cold butter, then chilling it. The complete homemade puff pastry master recipe has now been recovered from the notebook. Pastry baking time and temperature depend on the intended use and are not recorded here.

“Three ingredient” refers to the tart filling as titled in the original notebook; the pastry shells are additional. The creator confirms the exact product was one 14-ounce can of Eagle Brand sweetened condensed milk. Over years of cooking, she tried other brands but consistently returned to Eagle Brand because it worked best for her; it is her preferred brand now.
