Hasty Pudding
Ingredients
- 6 cups boiling water
- 1 teaspoon salt
- 1 cup yellow cornmeal
Directions
- Bring water to a rapid boil in a heavy, covered pot.
- Add salt and slowly add cornmeal to the water, stirring constantly.
- Continue stirring until thickened.
- Turn down the heat and cover.
- Continue simmering for about 30 minutes, stirring several times.
Family history
This was one of the creator's father's cornmeal favorites. She recalls that he loved cornmeal dishes whereas she could not stand cornmeal. This recipe is preserved as his family cooking, not a dish she personally enjoyed.
